56 Healthy Burgers...Thank you Jackie Simmons

So I'm messing around this morning and I clicked on a link in Google+ and let to a picture of Red Pepper Yogurt and Gouda Soup.  No recipe, but it then lead to Yummly where I located a red pepper & gouda soup that I can tweak with some Greek yogurt.  It does use heavy cream so I will  need to work with to skinny it up before posting it here.

Buenos noches!  This concludes all the Spanish that I don't know.   I have not created any new dishes, but, I did remember this one.   I have made this a few times and is pretty darn good.  Bear in mind that I tend to use more peppers, cumin and garlic than most recipes call for.   Also be careful with the cumin,  it's super hard to recover from using too much.  Point wise, if you're into weight watcher points, you should be ok as long as you're not adding meat or cheese.

Yes, I am a reader not a blogger.  With that said, I shall move on and take a stab at this. 

I have been trying to find healthy recipe blogs for awhile now and I would just like to say that you DO NOT have to be vegan to be healthy.  Yes people you can eat meat!  I don't have anything against vegetables, I rather like them.  In fact, I will often select a Portobello steak over an expensive cut of beef.  I even like tofu especially in spicy Thai food. 

So, in this place I shall attempt to post healthy recipes that include both meat and veggies. I cannot promise that I will blog every day, but, I will, as find or create recipes, post them.   I am in the midst of trying to healthy up a White Chicken Enchilada recipe.  I will post it once I have perfected or at least prepared the creation.
